RECIPE: Anzac Biscuit Sandwiches

Featuring simple ingredients and easy to follow instructions, these Anzac Biscuit Sandwiches are the perfect afternoon snack.

Ingredients:

1/2 cup flour of choice

1/2 cup rolled oats

1/3 cup coconut sugar

1/4 cup coconut oil

1 tbsp rice malt syrup

1/2 tsp baking soda

vegan chocolate, to melt

Instructions:

In a large mixing bowl, combine the flour, oats and sugar.

In a small saucepan over medium heat, whisk the oil and rice malt syrup until mixed completely.

Add the baking soda, and remove from heat immediately as it froths.

Pour the liquid mixture into the dry, and use your fingertips to form a dough consistency.

Once mixed, roll into tablespoon-sized balls and place on a lined baking tray.

Bake at 180 degrees Celsius for 8-12 minutes (depending on oven strength), or until golden brown.

Remove and let cool.

In a small saucepan, melt your chocolate.

Once melted, use as a spread between two biscuits – sandwiching them together to form a Anzac biscuit sandwich!

Let set, then enjoy with a cup of tea.
