RECIPE: Apple and Blueberry Pancakes

Makes 5-6 medium pancakes

Ingredients:

1 sweet red apple, grated

2 egg whites or chia eggs

1/2 cup almond meal

1/2 cup wholemeal spelt flour

2 tsp natural sweetner

1 tsp vanilla extract

1/2 cup almond milk

1 tsp baking powder

1 tsp olive oil

Frozen blueberries (to sprinkle over the uncooked side of each pancake, then flip)

Extra virgin olive oil to cook
