RECIPE: Coconut Chia Pudding with Mango Puree

Using her GT Homewares bowl in Earth, this Coconut Chia Pudding with Mango Puree is the perfect healthy treat.

Ingredients:

1/2 cup unsweetened almond milk
1/2 cup canned coconut milk
1 tbsp desiccated coconut
1/4 tsp dragonfruit powder – optional, but adds the pretty pink colour!
2 tbsp chia seeds

Method:

Combine all the ingredients into a bowl, and whisk together well.
Refrigerate for at least an hour.
Once set, stir the chia pudding again.

Mango Puree:

Blend together 1 cup of mango.
Serve on top of the chia pudding along with optional toppings of more chopped mango, rockmelon, raspberries, passionfruit, coconut flakes, mint, lime and coconut sugar.
