RECIPE: Raw Pad Thai with Creamy Peanut Sauce

Ingredients:

Zucchini, zoodles
Carrot, grated
Red cabbage, shredded
Cucumber, sliced
Green capsicum, sliced
Avocado, cubed
Spring onion, sliced
Sunflower sprouts
Fresh ginger, grated
Brazil nuts, chopped
Sesame seeds

Creamy Sauce:

3 tbsp cold pressed extra virgin sesame seed oil
2 tbsp maple syrup
1 tbsp apple cider vinegar
2-3 rounded tbsp natural peanut butter/ or macadamia butter
1/2 lime zest/juice
Garlic optional
Pink himalayan salt & cayenne pepper to taste

Method:

  1. To make the sauce place all ingredients in a small bowl. Mix until well combined. Set aside.
  2. To make the salad place all ingredients in a serving bowl and combine with the sauce.
  3. Enjoy!
